5 AFRICAN DISHES TO MAKE DURING LOCKDOWN
Parts of the world are slowly starting to reopen doors and ease back into a more normal way of life. However, the COVID-19 virus is not going anywhere, so most of us continue to remain at home, social distancing, in order to help combat the rapid spread of the virus. Many of us, ourselves at Pembury Tours included, have suddenly found ourselves spending a lot more time in the kitchen, whipping up rather ambitious and time-consuming recipes that we never before had the time or energy for.

1. Mozambican Peri-Peri Chicken
If you are in the UK, you are likely to be familiar with the fast-food brand, Nando’s. What you might not know, however, is that it was started in Africa, with the founders drawing inspiration from the staple Mozambican dish of peri-peri (piri-piri) chicken. For those, who aren’t familiar with the dish, it is a sticky, spicy and absolutely moreish dish – chicken is coated in a spicy chilli and lemony sauce and then grilled until the skin is crispy and the chicken tender and juicy.

2. Kenyan Pilau
Kenyan Pilau is the East-African interpretation of the Indian dish. Unlike the Indian variation, Kenyan Pilau is less spicy – deliciously flavoured with a variety of more delicate spices, such as cardamom, cinnamon, cumin and cloves. It is cooked in well-seasoned stock which adds a wonderful depth of flavour. Kenyan pilau can be made with either beef or chicken and is served with fresh tomato and onions, and is one of our top African dishes to try at home!

3. South African Bobotie
Bobotie is one of South Africa’s most loved dishes with many families enjoying it as a weekly staple dinner. It originates from the Cape Malay people of Cape Town and Durban whose deep understanding of spices has resulted in a delicious and flavourful cuisine. Bobotie is a baked dish of mince and raisins cooked in a perfectly balanced variety of spices. The dish is topped with a savoury egg custard, flaked almonds and bay leaves and cooked until golden brown.

4. Ghanaian Red Red Stew
Red Red is a simple bean and tomato-based stew that is enjoyed throughout Ghana. It is made with black-eyed beans , palm oil, tomato, onions, ginger, paprika, garlic and chilli – making it the perfect easy and warming winter dish. The name supposedly originates from the colour given to the beans when the tomato stew is added. An added bonus if you are trying to more plant-based dishes, is that this dish is vegan without requiring any substitute ingredients.

5. Malva Pudding
What is a delicious meal without a delicious dessert? Malva pudding is arguably one of South Africa’s favourite desserts and a classic African dish – it is a baked dessert with a spongy texture soaked in an almost-caramel like syrup. It is served hot with cream, custard or ice-cream. Even we confess to being baffled by the ingredient list – the staple ingredients include apricot jam, vinegar and nasturtium flowers. But trust us, combined with the amount of sugar that goes into it, the ingredients come together to create a mouthwatering dessert.
